Cucuzza.....or as we say, Gagootz
Addiction: Zucchini. Started last summer for me and hasn't waned a bit. I am so happy we are almost back in full-swing Zucchini season!! I think we eat zucchini in one form or another at least 2-3x/week. My favorite is sauteed with white wine, shallots and garlic, mixed in whole grain rice and sprinkled with a bit of grated parm....I could live on this! Below is another favorite recipe.
GAGOOTZ(zucchini)
In a tablespoon or so of olive oil, saute:
3 stalks celery diced
1 medium onion diced
Saute just until it starts getting tender, then add:
5 Chopped fresh tomatoes (I usually remove most of the seeds)
5 Diced baby zucchini
Fresh minced garlic (use at least 2 cloves, more if you like garlic)
1-2 bay leaves
Salt and pepper to taste
Simmer it slowly so that it makes its own soup. Before the Gagootz is ready, cook up some ditalini noodles to al dente.
Serve the Gagootz over the ditalini, toss in some browned Sopressata sausage, and top with freshly grated parm or pecorino romano cheese.
I have also made this as a risotto dish and it is delish!!
